Gluten Free Flour Mix

When I began my journey of removing gluten from my diet I was so discouraged. I knew it had to be done as I had ended up in the hospital, but I was so reluctant. I just didn't know what to do. I didn't know what to eat, drink, or use. I didn't particularly like gluten free products either. I was crushed that this was my new life. I went through gluten withdrawal for over a week. I just was sick with the biggest migraine I had ever had. I was struggling to function and just could not remember anything. I felt sick to my stomach and couldn't eat. I was tired and cranky. I was a horrible mess and wondering if this really was worth it. If maybe they were wrong.
I kept at it and soon began to feel better. I was definitely pleased with the results. I could go out in public for a meal and not have to worry how it would effect me. I no longer had constant stomach pain from bloating. I no longer was sick to my stomach daily and didn't have as many canker sores. It was like my life was starting over. Was it hard? Oh, absolutely but 100% worth it. They were right.
I started to look for a gluten free flour that I enjoyed. The mixes just didn't do it for me. They were either not to my tastes or didn't produce the texture I was looking for. I was on a mission to get this figured out. I loved baking with my daughters and HAD to find the perfect one. It does not exist. I did stumble upon this mix one day and I am so glad I did. This mix is Alton Brown's Gluten Free Sugar Cookie Mix. So far it does exactly what I need it. I am so impressed. I have been using this mix for years and recommend it to people when asked.
