Gluten Free and Crustless Quiche

I have so many memories of waking up to a warm quiche my Momma was making on a Sunday morning. The smell of the onions and garlic cooking. The sound of the bacon frying. The warmth of the oven heating the chilled kitchen. I can close my eyes and be transported back to that time.

This quiche is so so simple, friends. There is a handful of ingredients and it comes together in about 45-50 minutes with 40 minutes of that time baking. So really you spend 5-10 minutes to get a happy family. What more can be asked of a Sunday morning breakfast?


Quiche:

1. Cook bacon or fry some leftover ham. Don't skip this step if using ham. The flavor of the fried ham will be worth it.

2. While the meat cooks (can be left out if vegetarian) chop half an onion, 2 cloves of garlic, and about 5 mushrooms.

3. Gather pre-shredded cheese or grate some Parmesan. 10 eggs. 1 Cup of Heavy Cream.

4. Take the meat out of the pan and place in a large bowl.

5. Put the vegetables in the pan. Cook for about 3 minutes or so just to soften.

5. In the large bowl with the meat place 1 cup heavy cream (do this first to cool off meat), 5 eggs, and 5 egg whites (save the yolks and make a custard...yum). Mix.

6. Put the sauteed vegetables in the egg mixture.

7. Pour into a buttered pie pan.

8 Place the pan into an oven and set it for 350 degrees for 40 minutes. Take it out once the top has browned.

9. Let sit for 5 minutes while you get your tea, coffee, or juice.

10. Cut into 8 portions and enjoy.
