Gluten-Free Cinnamon Rolls

Soft, sweet, and totally wheat-free!
These fluffy gluten-free cinnamon rolls are just as tender and satisfying as traditional ones — with a soft, pillowy dough and a sweet cinnamon-sugar swirl in every bite. Topped with (optional) cream cheese-style glaze, they’re perfect for holidays, brunches, or cozy mornings. No one will guess they’re gluten-free!
📝 Dough Ingredients:
4 ½ tsp (2 packets) active dry yeast
1 cup warm water (110°F)
½ cup granulated sugar
½ cup melted butter or coconut oil
¾ cup milk (dairy or unsweetened almond)
1 cup plain Greek yogurt or sour cream
4 large eggs
6 ½ to 7 cups gluten-free 1:1 baking flour
2 tsp baking powder
1 tsp salt
🍯 Filling:
3 cups packed brown sugar
6 tbsp ground cinnamon
8 tbsp butter, melted
8 tbsp cornstarch
🧁 Optional Cream Cheese-Style Glaze:
4 cups confectioners’ sugar
1 cup shortening
2 tbsp water
1 tsp clear imitation vanilla extract
👩🍳 Instructions:
1. Proof the Yeast:
In a small bowl, combine warm water with a pinch of sugar and yeast. Let sit 5–10 minutes until foamy.
2. Mix Wet Ingredients:
In a large bowl or stand mixer, mix together sugar, melted butter, milk, yogurt, eggs, and the proofed yeast.
3. Add Dry Ingredients:
Add salt, baking powder, and gluten-free flour, 1 cup at a time, mixing until the dough is soft but not overly sticky. Let the dough rest for 10–15 minutes.
4. Roll It Out:
On a floured surface or parchment, roll dough into a 16x20-inch rectangle, about ½" thick.
5. Add Filling:
Mix cinnamon and brown sugar. Spread melted butter over dough, then sprinkle sugar mixture evenly. Dust with cornstarch for structure and gooey texture.
6. Roll & Cut:
Roll the dough tightly from the long side. Slice into 12 large rolls (or 18 smaller). Arrange in a greased 18x13” pan or individual silicone squares for easy market packaging.

7. Optional Second Rise:
Cover and let rise in a warm place for 30–45 minutes for softer texture. (You can also bake immediately.)
8. Bake:
Bake at 350°F (175°C) for 22–28 minutes, or until golden brown and cooked through.
9. Glaze (Optional):
Whisk glaze ingredients together until smooth. Spread over warm rolls and let it melt into the swirls.

💡 Tips:
Use parchment to roll if dough is sticky.
These rolls freeze well before or after baking.
Great served warm with a side of fruit or coffee!
