🥕 Ingredients:
  • 4 carrots
  • 1 stalk celery
  • Handful of white fingerling potatoes
  • 3 garlic cloves
  • 2 tsp fresh chopped ginger
  • 1 onion
  • 1 cup green lentils
  • 1 cup red lentils
  • 2 cups spinach
  • 1 cup almond or coconut milk
  • 1/4 cup tomato paste
  • 4 cups vegetable broth
  • 1/4 cup potato flour (for thickness)
  • Juice of half a lemon
  • 1 tsp ground black pepper
  • 1 tsp ground cinnamon
  • 2 tsp smoked paprika
  • 2 tsp turmeric
  • 2 tsp ground cumin
🍲 Tips for Success:
  • Rinse lentils before cooking to reduce bitterness and improve texture.
