This vibrant lentil and vegetable stew is a cozy, nutrient-packed dish bursting with warming spices, creamy plant-based milk, and hearty greens. It blends green and red lentils for texture and flavor, balanced with tender root vegetables, spinach, and a rich, spiced broth.
Perfect for chilly nights or batch meal prep, this stew is naturally gluten-free and completely dairy-free when made with almond or coconut milk. The warming mix of turmeric, cumin, paprika, and cinnamon makes it deeply satisfying without being too spicy.

🥕 Ingredients:
4 carrots
1 stalk celery
Handful of white fingerling potatoes
3 garlic cloves
2 tsp fresh chopped ginger
1 onion
1 cup green lentils
1 cup red lentils
2 cups spinach
1 cup almond or coconut milk
1/4 cup tomato paste
4 cups vegetable broth
1/4 cup potato flour (for thickness)
Juice of half a lemon
1 tsp ground black pepper
1 tsp ground cinnamon
2 tsp smoked paprika
2 tsp turmeric
2 tsp ground cumin
