Gluten Free Beef Meatballs

Meatballs are a lot of work but oh so worth it. They can be made in advanced and frozen for a quick dinner or made and cooked that evening. They are so versatile.
They can be made and placed with many difference sauces and bases. My family enjoys these with a tomato based sauce like a bolognese or a white cheese based sauce like an alfredo both served with a gluten free pasta. They can be covered in a BBQ sauce and placed inside a gluten free deli bun. They can be left plain with no sauce and allow the meatballs to do the flavor work.
Meatball Mix:
Ground beef (use a higher fat for a moist meatball) 3lbs.
Half Diced Onion
3 Cloves of Garlic
2 Large eggs
2 Tablespoons of Fresh Chopped Basil
Season with Salt, Pepper, Cayenne Pepper, Italian Seasoning.
1 cup Gluten Free Breadcrumbs
Place all in a bowl and mix well.

Using an ice cream scoop. *This is important as it makes them the same size for even cooking. Scoop the mixed mixture into your hand and roll into a ball. Continue with this until all the mixture is rolled.

Cook on medium heat in pan with a little canola or sesame oil until cooked through. You will need to do this in batches to avoid overloading the pan. The meatballs need space.
Put your favorite sauce and base with them and enjoy!
